About Le Panare

Every December 22nd, on the eve of the feast of Santa Vittoria, Spongano revives one of the most evocative rituals in Salento: Le Panare. Large baskets woven from reeds and olive branches, filled with olive pomace and decorated with palms, mandarins, golden garlands, and the image of the Saint, are lit and carried in a procession through the town streets, eventually gathering into a single great bonfire that burns throughout the night. A propitiatory peasant ritual that weaves together fire, devotion, folk music, and local flavors in the Province of Lecce.

A fire ritual in the heart of Salento

In the small town of Spongano, in the Province of Lecce, December 22nd is a date that smells of olive pomace and fire. On the eve of the feast of Santa Vittoria, the town's patron saint, Le Panare takes placeโ€”one of the most authentic and spectacular peasant re-enactments in lower Salento. It is a tradition rooted in the world of olive mills and the olive pressing cycle, attracting visitors and curious onlookers from all over Puglia every year.

What are the panare

The panare are large baskets woven with vines, reeds, and olive branches, filled with sansa (olive pomace), the residue from olive processing. In the past, mill workers built them by reusing waste from the mill: they would fill them, adorn them with palms, colorful garlands, golden threads, small flags, mandarins, and the image of Santa Vittoria, and on the eve of the feast, they would emerge from the mills to carry them lit along the village streets.

The bond with Santa Vittoria and the olive mills

The festival coincides with the liturgical feast of Santa Vittoria and the milling season, when the town thrives on the work of its oil mills. The ritual holds a dual meaning: thanksgiving for the harvest of the year and a propitiatory wish for an abundant harvest the following year. The act of lighting the fire and carrying it in a procession had a devotional and communal value, through which every family participated in the collective prosperity. After a decline in the 1980s, the tradition was brought back to life even by those no longer belonging to the world of olive mills, renewing popular participation.

On the afternoon of December 22nd, the panare are gathered, and the procession begins, accompanying them through the streets of the historic center amidst music and crowds. As night falls, all the baskets converge in a single location where they are placed, lit, and left to burn throughout the night, in a spectacle of flames that illuminates the town. The parade is joined by a marching band, fireworks, and markets.
