The Sagra dello Stinco Cotto nel Forno a Legna (Festival of Pork Knuckle Cooked in a Wood-Fired Oven) is one of the most popular gastronomic festivals of the summer in Parrano, a village in the province of Terni nestled in the woods and gorges of the Orvieto area, in Umbria. The absolute star is the pork knuckle, strictly cooked in a wood-fired oven as local tradition dictates, served tender and flavorful.

The 2026 edition, the ninth, of the Sagra dello Stinco Cotto nel Forno a Legna (Festival of Pork Knuckle Cooked in a Wood-Fired Oven) is scheduled for Saturday, August 1st, and Sunday, August 2nd, in Parrano (TR). Described as one of the most delicious events of the summer, the festival centers on the pork knuckle, strictly cooked in a wood-fired oven, as tradition dictates.
In the Parco Pubblico Vittorio Valletta, the stalls of the Polisportiva Parrano Calcio (Parrano Football Sports Club) offer the signature dish along with other Umbrian culinary specialties, combining good food and entertainment for the whole family.
