Traditional bread-making days at the Monte Corno Nature Park House
The Brotbacktage (bread-making days) are a recurring summer event at the Monte Corno Nature Park House - the Naturparkhaus Trudner Horn - in Trodena nel parco naturale, a small mountain village in the Autonomous Province of Bolzano, Trentino-Alto Adige. Every Friday afternoon, from late spring to autumn, the park house opens its doors to those wishing to rediscover one of the oldest customs of Alpine farming culture: making bread by hand.
The heart of the experience is the bucket mill preserved inside the building: it is the last facility of its kind still operating in South Tyrol, restored and spread over three floors, where cereals have been ground again since 2004. With the freshly milled flour - a typical mix of wheat, rye, and spelt - participants learn to knead according to the traditional recipe and bake their loaves in the park house's wood-fired oven.
Techniques are taught following the methods learned from the local women of Trodena, guardians of a heritage of gestures and proportions passed down through generations. As the provincial administration noted, the Brotbacktage make "an ancient farming tradition accessible to everyone." After baking, the most anticipated moment arrives: tasting the still-warm bread, accompanied by an herb cream made with plants gathered from the park house's herb garden.
The event takes place at the Monte Corno Nature Park House, at Am Kofl 2 in Trodena nel parco naturale, every Friday during the summer months, usually from 3:00 PM to 5:00 PM. Booking is mandatory (limited spots) by calling the Naturparkhaus. A simple and genuine way to take home, along with the bread, a piece of South Tyrolean farming culture.
The 2026 Brotbacktage calendar kicks off on Friday, April 4th, and then resumes weekly every Friday from June 19th to September 25th, 2026 (June 26; July 3, 10, 17, 24, and 31; August 7, 14, 21, and 28; September 4, 11, 18, and 25), usually from 3:00 PM to 5:00 PM.
At each session, participants grind cereals in the park house's ancient bucket mill, knead according to the traditional South Tyrolean recipe, and bake loaves in the wood-fired oven, concluding with a tasting of warm bread.
