The signature dish of the festival is, of course, the tortello, served in two distinct Tuscan traditions: the Lucca style, filled with meat and served with a hearty sauce, and the Mugello potato style, which is more delicate and creamy. Alongside the tortelli, the kitchen serves pappardelle with wild boar and porcini mushrooms, a classic Tuscan dish defined by rich sauces and woodland flavors.
The main courses feature oven-roasted pork shank, slow-cooked until tender, alongside grilled meats and sweet fried treats for dessert. The real highlight that gives the festival its name, however, is the craft beer: dishes are paired with brews from the Birrificio La Staffetta of Calci, located on the slopes of the Monti Pisani, as well as local wines.
