The festival of handmade tajarin in the heart of Valle Gesso
The Tajarin Festival is one of the most anticipated autumn events in Roaschia, a mountain village in the Valle Gesso, nestled in the heart of Piedmont near the Maritime Alps Park. Every year, on a Sunday in September, the small village comes alive to celebrate the dish that carries its name across the world: tajarin, the incredibly fine egg noodles rolled strictly by hand according to the traditional Roaschia recipe.
Tajarin are much more than just a first course: they are a piece of local identity. In Roaschia, their preparation is a skill passed down from generation to generation, made with eggs, flour, patience, and expert hands. During the festival, you can watch the pasta being made and discover the ancient tools and techniques of a peasant cuisine rooted in the life of the Cuneo valleys. It is the ideal opportunity to understand why this dish has become a symbol of Piedmontese gastronomy.
The highlight is the grand communal lunch featuring tajarin, served in the most beloved versions: with mushroom sauce or meat ragù, accompanied by local appetizers and dessert. Throughout the day, the streets of the historic center host a market of artisanal and local products, while the festivities continue in the afternoon with live music and entertainment for all ages.
