In the heart of autumn, the municipality of Cervasca, located in the province of Cuneo at the foot of the Valle Grana, celebrates the fruits of the forest with the Pisacan Mushroom Festival and the Servaschina Chestnut Festival. It is one of the most beloved autumn events in the Cuneo area, a steadily growing village fair that attracts thousands of visitors every year under a now-famous motto: "Autumn colors, flavors, and sounds".
The festival's name pays tribute to two local products. Pisacan are mushrooms that grow wild in the vast chestnut and beech forests of the Valle Grana: in the Piedmontese dialect, the term refers to mushrooms other than the prized porcini, often considered of little value elsewhere. Cervasca, however, has chosen to re-evaluate them and turn them into a symbol of identity, even dedicating a monument to them at the entrance to the village. The Servaschina Chestnut is a local variety with a sweet flavor and a floury texture, ideal for roasted chestnuts, desserts, and soups: much more than just food, it is a symbol of the community's history, economy, and identity.
The scientific and cultural heart of the event is the "Pisacan" Mycological Exhibition, curated by the Amba-Cumino Association of Boves: an opportunity to learn about the world of mushrooms, from the most common to the rarest species, with the guidance of expert mycologists. Sunday is dedicated to the grand chestnut roast, with an exhibition fair enlivening the town center from 9 am to 7 pm, featuring local products, handicrafts, street vendors, and shows.
Friday and Saturday evenings are the realm of local gastronomy: under the heated marquee, themed dinners are offered with mushroom-based menus and local specialties, accompanied by musical entertainment and traditional dancing. Throughout the event, the streets and squares of Cervasca host markets with local products, woodland walks, nature activities, and fun moments for families.
Having grown edition after edition, the Pisacan Mushroom and Servaschina Chestnut Festival has become a benchmark for the Piedmontese autumn, capable of combining the promotion of forest products with the conviviality of a village festival. As per tradition, the event will feature the "Pisacan" Mycological Exhibition, themed dinners under the heated marquee, musical entertainment on Friday and Saturday, and the grand Sunday chestnut roast, with an exhibition fair enlivening the town center. Cervasca is located in the province of Cuneo, a few kilometers from the provincial capital along the road to the Valle Grana. By car, it can be reached from the Cuneo-Caraglio road; those arriving from outside the region can take the A6 Turin-Savona motorway to Fossano and then continue towards Cuneo. The reference railway station is Cuneo, which is connected by bus to the municipality's hamlets.
