Handmade maccheroni with Nebrodi black pork sauce, in the heart of Sinagra

In the heart of summer, the village of Sinagra—home to about 2,700 residents nestled along the Naso stream, 260 meters above sea level in the Nebrodi Park—pays tribute to its iconic dish with the Maccheroni Festival. It is one of those authentic village celebrations that tell the story of a territory through its cuisine: an open-air evening in the square where the community gathers around a steaming plate of pasta.
The undisputed star is the handmade maccheroni, a traditional pasta rolled and pierced one by one according to the ancient skills of local housewives, served with a hearty Nebrodi black pork sauce. The black pig is one of the rustic, semi-wild breeds that have grazed in the oak forests of the Nebrodi for centuries, and it is now one of the most prized gastronomic delicacies of the area, alongside local hazelnuts, cheeses, and cured meats. The marriage of artisanal pasta and this intensely flavored sauce is the culinary signature of Sinagra.
The festival takes place in Piazza Sandro Pertini, in the town center, and is organized by the local Civil Protection group: a perfect example of how Sicilian volunteer associations act as promoters of local food traditions. The evening, which typically begins around dinner time, combines tastings, music, and the genuine atmosphere of summer village festivals.
The Maccheroni Festival is part of the extensive Sinagra Summer program and is traditionally paired with CorriSinagra, the running race that attracts athletes and enthusiasts to the town's streets every year. Flavor and sport thus intertwine in a single day of celebration, between the exertion of the race and the reward of a plate of maccheroni in the square.
For those visiting the Nebrodi in summer, the festival is the ideal opportunity to taste an authentic product in its natural setting, far from mass tourism routes. Sinagra, with its hazelnut groves, wood-fired ovens, and mountain flavors, offers a genuine experience of inland Sicily, where small towns still cherish recipes passed down through generations.
The dates for the 2026 edition of the Sinagra Maccheroni Festival have not yet been announced. The festival is traditionally part of the Sinagra Summer program and takes place in August in Piazza Sandro Pertini, featuring handmade maccheroni served with Nebrodi black pork sauce.
