For three days in mid-June, the Parco Le Sughere in Quattro Strade di Bientina, in the province of Pisa, transforms into a large gastronomic gathering dedicated to salt cod. In the outdoor spaces of the Circolo Il Risorgimento, food stalls serve dried cod prepared according to traditional Tuscan recipes, in an atmosphere of popular celebration filled with communal tables, conviviality, and live music. A beloved local event organized in collaboration with Piranha Street Food.

A festival dedicated to salt cod in the heart of the Pisan plains

The Salt Cod Festival is one of the gastronomic highlights of the summer in Bientina, a small town in the province of Pisa overlooking an ancient, now-reclaimed lake. The festival takes place in the hamlet of Quattro Strade, at Parco Le Sughere, the green space managed by the Circolo Il Risorgimento, which hosts a busy calendar of village festivals throughout the summer season.

The absolute star is salt cod, the salt-preserved cod that has been part of Tuscan popular cuisine for centuries. Originally a humble, long-lasting dish, it is now a true delicacy: at the festival, it is served in various versions, from classic appetizers to traditional main courses, accompanied by seasonal side dishes and local wines.

By car: Bientina can be reached via the SS439 Sarzanese-Valdera or the FI-PI-LI highway (Pontedera or Cascina exits); the hamlet of Quattro Strade is located along the road connecting Bientina to Calcinaia. By train: the nearest stations are Pontedera-Casciana Terme and Cascina on the Florence-Pisa line, with onward travel by bus or car.
