Every year, on the second Thursday before Christmas, Carrù wakes up at dawn for the National Fat Ox Fair, one of Italy's oldest and most renowned livestock events. In the Foro Boario of Piazza Mercato, Piedmontese cattle are paraded while the town fills with the aroma of 'bollito misto' (mixed boiled meats), stalls selling local products, and thousands of visitors. A festival that weaves together farming tradition, culinary excellence, and the pride of the Cuneo region.

A tradition rooted in 1473

The National Fat Ox Fair is much more than an event: it is the soul of Carrù, a town in the Province of Cuneo, Piedmont. The dish combines the traditional seven cuts and seven side dishes, accompanied by the famous 'bagnet vert' and 'bagnet ross' sauces.
