In Dogliani, a town in the Langhe area of the Cuneo province, November 2nd is no ordinary day: it is the day of Cisrà, the famous tripe and chickpea soup prepared according to an ancient recipe passed down through generations. The tradition dates back to the 1600s, when members of the Confraternite dei Battuti would offer a steaming bowl of this soup to the faithful and pilgrims arriving in town for the Saints' Fair, the last major market before winter.
Cisrà is much more than a dish: it is a ritual involving dozens of volunteers who spend days preparing the soup, made with tripe, chickpeas, and autumn vegetables. Distribution begins in the early morning hours, until supplies run out, under the 19th-century market canopy of the village. The soup is served in characteristic terracotta bowls from Ceramiche Besio, true collector's items that many visitors keep as a souvenir. Each bowl is paired with a glass of Dogliani Docg, the red wine made from Dolcetto grapes that has made this corner of the Langhe famous, available at the Bottega del Vino.
Surrounding the Cisrà is one of the most popular fairs in the Piedmontese autumn calendar. Throughout the streets of the village, there are over three hundred exhibitors: merchants, hobbyists, artisans, and agricultural producers. Under the historic market canopy, the Langhe Farmers' Market takes place, with a special focus on the region's gastronomic excellence: cheeses, sweets, jams, honey, vegetables, and local products.
The day is enriched by guided tours of the historic center and the Church of the Battuti, as well as walks and cycling excursions with a final Cisrà tasting. The event is part of the 'Itinerario dell'enovago' and kicks off a dedicated food and wine week, with traditional themed menus offered by Dogliani's restaurants.

Dogliani is located in the Langhe, in the province of Cuneo (Piedmont). By car: from the A6 Turin-Savona motorway, take the Carrù or Mondovì exit, then follow provincial roads to Dogliani. By train: the Dogliani station is on the Bra-Ceva line. On the day of the fair, it is recommended to arrive early for parking.
