The dish that gives the festival its name is the tortello maremmano, a pasta filled with ricotta and greens (spinach or chard), hand-prepared by the skilled volunteers of the Pro Loco according to the timeless recipe. You can enjoy it in its most popular variations: with meat ragù, butter and sage, or the unmistakable walnut sauce. Alongside the tortelli, the menu features penne with tomato or meat sauce and a rich selection of rustic Maremma dishes cooked to order.
