Established in the early 1990s, the event reached its 32nd edition in 2025, cementing its status as a traditional highlight of the Ciociarian summer.
At the heart of the festival is a humble and authentic dish from the local peasant tradition: maltagliati with beans. This handmade pasta, cut into irregular shapes (hence the name 'maltagliati' or 'badly cut'), is served with a rich bean sauce following a recipe passed down through generations. Alongside this signature dish, food stalls offer assorted sandwiches, local delicacies, and other traditional preparations, all paired with great beer and local wines.
The Maltagliati Festival is more than just a food event. The reference railway station is Anagni-Fiuggi, on the Rome-Cassino line, which is connected to the center by local services.
Access to the festival area is free; you only pay for what you consume at the food stalls, with affordable prices. Arriving early in the evening is recommended to secure a table.
