The Graukäsefest Rinneralm is the summer highlight where the Rinneralm mountain hut, located at 1,892 metres in the Racines-Giovo hiking area, celebrates its most iconic product: Graukäse, the traditional grey cheese of South Tyrolean farming culture. We are in the municipality of Racines/Ratschings, in the province of Bolzano, in the heart of Trentino-South Tyrol, where the tradition of alpine pasture farming remains vibrant and tied to the daily craft of processing mountain milk.
Graukäse is a lean, low-fat cheese with a bold character, produced through the acid coagulation of milk without the addition of rennet. It is one of the oldest and most genuine products of the Tyrolean Alps: after a few weeks of ripening, it develops its unmistakable aroma and typical slightly piquant notes. At the Rinneralm, the Graukäse is produced directly on-site, alongside alpine butter and yogurt, following the rhythms and methods of traditional mountain farming.
During the festival, the famous Graukäse is showcased in many variations, from classic preparations to typical mountain cuisine dishes. There is no shortage of South Tyrolean delicacies and homemade sweet treats, all accompanied by fresh alpine products. The day unfolds in a convivial and relaxed atmosphere, surrounded by the scent of high-altitude meadows and panoramic views of the surrounding peaks.
The Rinneralm mountain hut is located just a few metres from the top station of the Racines-Giovo cable car, in a sunny and easily accessible position: after the cable car ride, it is just a short walk to reach it. The festival is designed for the whole family and is part of the summer event programme in the Racines-Giovo area, offering the perfect opportunity to combine a gentle high-altitude hike with the pleasures of mountain gastronomy and the discovery of a cheese that defines South Tyrol.

The absolute star is the Graukäse produced on the mountain pasture, offered in numerous variations alongside mountain cuisine specialties. The Rinneralm mountain hut is located at 1,892 m in the Racines-Giovo area, in the municipality of Racines/Ratschings (BZ). It is easily reached via the Racines-Giovo cable car (departing from Colle/Gasse) followed by a short walk from the top station. By car, you can reach Racines from the Vipiteno motorway exit (A22 Brenner Motorway), then follow signs to the ski slopes and lifts.
The festival is traditionally held on a Sunday in August, during the mountain hut's summer season (generally open from late May to early October).
We recommend wearing comfortable mountain shoes and dressing in layers, as temperatures at high altitudes can change rapidly. The mountain hut accepts cash, debit cards, and credit cards.
