The Goat Meat Festival and the Musciska Festival are the oldest gastronomic events in the Gargano region. Every summer, in Rignano Garganico (Foggia), Largo Portagrande fills with the aromas of pastoral tradition. The stars of the show are the Gargano goat meat cooked "ad acqua e sale" (in water and salt) and musciska, the dried, spiced meat of the shepherds. With live folk music, tastings, and a stunning view of the village overlooking the Tavoliere plain, it is an evening that captures the rural soul of the Mountain of the Sun.

The ancient flavors of the Gargano

In the heart of the Gargano, perched on a spur overlooking the Tavoliere delle Puglie, the village of Rignano Garganico has been hosting one of the most beloved food festivals in the province of Foggia for over forty years. The Goat Meat Festival and the Musciska Festival, organized by the Pro Loco of Rignano Garganico, share the same August evening and represent the longest-running culinary event on the promontory. This is no ordinary festival: it is a tribute to the pastoral civilization that has defined the identity of this small town for centuries.

Two festivals in one: goat and musciska

The first star is the Gargano goat meat, cooked according to the ancestral "ad acqua e sale" recipe: a deliberately simple preparation designed to enhance, rather than mask, the authentic flavor of a rustic meat born from the rugged pastures of the Gargano. Alongside it is the musciska (or "muscisca"), the dried meat of the shepherds: lean strips of goat or sheep, twenty to thirty centimeters long, de-fatted, salted, and seasoned with chili, garlic, and wild fennel, then dried in the wind and sun. Once a way to preserve meat during transhumance, it is now a delicacy served grilled that tells the story of an entire rural culture. How to get there

Rignano Garganico can be reached via the SS693 and the SP road from the San Marco in Lamis junction; it is about 40 km from Foggia. The historic center is pedestrianized: we recommend parking in the areas on the outskirts of the town and walking to Largo Portagrande.
