Every May, the village of Staffoli in the municipality of Santa Croce sull'Arno (Province of Pisa) hosts the Gallettino Festival. Established in 2018 by the Pro Loco Staffoli in partnership with the local AVIS blood donors' association, the event takes place under the historic marquee at the AVIS Center on Via Ugo Foscolo. Volunteers serve their signature grilled cockerel alongside Tuscan appetizers, pasta with meat sauce, mushroom and sausage risotto, and sausages with 'uccelletta' style beans.
