A day of tastings and tradition dedicated to the Cinisara cow and its cheeses
Cinisara Cheese is the event in Cinisi, in the Metropolitan City of Palermo, that celebrates the Cinisara cow and the cheeses crafted from its milk. Promoted by the Pro Loco Cinisi 2.Zero with the patronage of the Municipality of Cinisi and funding from the Regional Department of Agriculture, the event transforms the historic center into a journey of tastings, meetings, and immersive experiences to discover a unique rural heritage in Sicily.
The Cinisara is one of the rarest and most significant native cattle breeds in Western Sicily, officially recognized as a Slow Food Presidium. Its milk gives life to iconic local products: caciocavallo, caciotte, and ricotta, which are expressions of sustainable animal husbandry deeply rooted in the landscapes of Cinisi. The event focuses on this bond between animal, landscape, and community, offering visitors the chance to meet the farmers and cheesemakers who preserve these ancient skills.

Cinisara Cheese is more than just a gastronomic festival; it is an opportunity to reflect on the value of biodiversity and the identity of a town in the province of Palermo that has chosen to champion a heritage at risk of disappearing. Between performances, book presentations, and moments of conviviality, the event invites residents and visitors to rediscover the authentic flavors of rural Sicily.
The 2026 edition of Cinisara Cheese was held on Sunday, April 26 in Cinisi. The day began at 10:00 AM with a bike ride open to all ages, in collaboration with the Margi Bikers, heading towards the La Vecchia Mannara farm. From 11:00 AM to 8:00 PM, the Taste Area offered tastings of local products; at 1:00 PM, in Piazza Vittorio Emanuele Orlando, the "Everyone to the Table!" communal dining event highlighted Cinisara cow milk cheeses, accompanied by stories from producers, folk music, and Cinisara folk dances. In the afternoon, the presentation of the book "I Segreti del Chiostro," the "Magic of Milk" children's workshop with the "Milk Magician Diploma," and the "Discovering the Cinisara" talk with veterinarians, scholars, and producers took place. Free admission.
Cinisi is located in the Metropolitan City of Palermo, just a few kilometers from the Falcone-Borsellino Airport in Punta Raisi. By car, it is accessible via the A29 Palermo-Mazara del Vallo motorway (Cinisi-Terrasini exit); by train, the Cinisi-Terrasini station is served by the Palermo-Trapani line.
Admission to the event is free. Some activities (bike ride, workshops, communal table) may require booking or have limited availability.
The initiatives take place in the town center, between Piazza Vittorio Emanuele Orlando and Corso Umberto I. We recommend arriving early and wearing comfortable clothing for the morning bike ride.
