Every year, between late August and early September, the small village of Cenaia, part of the municipality of Crespina Lorenzana in the province of Pisa, becomes the kingdom of a dish that has become its hallmark: fegatello. The Fegatello Festival is one of the most beloved gastronomic events in the Pisan Hills, drawing hundreds of food lovers to the Spazio Festa on Via Brodolini every evening.
Fegatello is a product of the Tuscan peasant tradition, born from the culture of pork and the nose-to-tail use of the animal. It is prepared by grinding pork cuts and mixing them with liver and wild fennel; the mixture is then wrapped in pig's caul fat and cooked in earthenware pots, a process that takes several days from preparation to the finished product. It is a humble yet characterful dish, deeply rooted in the identity of the Pisan countryside.

The Fegatello Festival is not just for foodies. After dinner, the Spazio Festa comes alive with live dance music, in the true spirit of a village fair: orchestras and dance evenings keep visitors entertained until late in a convivial and family-friendly atmosphere.
The event is organized by ASD Cenaiese, the local sports association, which has been running the festival for over twenty years with the help of volunteers. It is part of the "Sere d'estate a Crespina e Lorenzana" summer program, which brings music, sports, art, and tradition to the municipality from June to September. The Fegatello Festival remains one of the most cherished events in the province of Pisa and the Tuscan culinary scene.
The 2026 edition of the Cenaia Fegatello Festival is scheduled from Friday, August 28 to Sunday, August 30, 2026, at the Spazio Festa on Via Brodolini, in the village of Cenaia (Municipality of Crespina Lorenzana, province of Pisa). The dates are confirmed as part of the "Sere d'estate a Crespina e Lorenzana" summer festival.
As per tradition, the ASD Cenaiese food stands will open in the evening, featuring the famous fegatello as the signature dish, accompanied by house specialties, followed by live dance music. The full menu and musical program will be published by the organizers closer to the event.

Food stands generally open at 7:00 PM. Entry is free. Reservations are not required, except for tables near the dance floor.
