Every June, the Municipal Sports Field of Bientina, in the heart of the Province of Pisa, hosts the Brazier and Sombrero Festival, a gastronomic event organized by the Contrada Centro Storico in connection with the local Palio. The stars of the show are the famous "sombreri"โ€”round ricotta and spinach ravioli shaped like Mexican hatsโ€”served alongside classic Tuscan grilled meats: Florentine steak, tagliata, sausages, and fried seafood. A village festival rooted in tradition

The Brazier and Sombrero Festival is one of the most beloved summer events in Bientina, a small town in the Province of Pisa overlooking the ancient Padule wetlands in Tuscany. Now in its 23rd edition in 2026, the festival is organized by the Contrada Centro Storico, one of the most vibrant groups in the Bientina community, deeply tied to the tradition of the Bientina Palio. For a few evenings, the Municipal Sports Field on Via Leonardo da Vinci transforms into a large, convivial gathering place where generations of locals and visitors meet over great food and community spirit.

Sombreri, the festival's signature dish

The festival's curious name comes from its most distinctive dish: sombreri, unique round ravioli filled with ricotta and spinach, whose shape recalls a traditional Mexican hat. These are the absolute stars of the evening, served with meat sauce, pink sauce, or tomato sauce. They are accompanied by penne with the same sauces for those who prefer a more classic pasta dish. By train: nearest stations are Pontedera-Casciana Terme and Cascina (Florence-Pisa line), followed by local bus connections. Nearest airport: Pisa "Galileo Galilei".
