The signature dish of the festival, from which it takes its name, is the famous tagliatelle al cinghiale (wild boar pasta), prepared according to traditional Maremma and Sienese recipes with a rich wild boar ragù, an animal typical of these woods. At the food stalls set up by the association's volunteers, you can also taste other Tuscan specialties in a genuine and convivial atmosphere that is one of Iesa's hallmarks.
