The Salsiccia Festival is the most anticipated event of the year for the village of Pari, a small medieval hamlet in the municipality of Civitella Paganico, nestled in the hills of the Grosseto province, in Tuscany. Every year, on the last weekend of September, the streets and squares of the village come alive to celebrate local culinary traditions, particularly the famous 'parigiana' sausage that gives the festival its name.
Organized with passion by the Associazione Sette Colli since 1966, the festival is much more than just a food and wine event: it is a gathering point for the entire community of Pari and for the many visitors who, year after year, reach this authentic corner of the Maremma. Decade after decade, the event has managed to preserve its genuine character, remaining faithful to the simple and flavorful cuisine of the Tuscan peasant tradition.
The absolute star is the parigiana sausage, served grilled according to the local recipe. Alongside it, the food stalls offer a rich selection of typical dishes:

Beyond the food, the Salsiccia Festival offers evenings filled with live music, DJ sets, piano bars, and entertainment for all ages. Strolling through the stone alleys of Pari, illuminated for the occasion, offers an authentic experience that combines gastronomy, conviviality, and the charm of an ancient castle of the Conti dell'Ardenghesca.

The 2026 edition of the Salsiccia Festival is scheduled in Pari, a hamlet of Civitella Paganico, from Friday, September 25th to Sunday, September 27th. As per tradition, the food stalls will offer parigiana sausage, polenta alla boscaiola, wild boar tagliatelle, porcini mushrooms, and other typical dishes of Maremma cuisine.
The evenings will be accompanied by live music and entertainment in the village squares. The complete program, with times and musical guests, will be published by the Associazione Sette Colli on official channels closer to the event.
Pari is a hamlet of the Municipality of Civitella Paganico (GR). By car, it can be reached from the SS223 Siena-Grosseto road, taking the exit for Pari and following the signs for the village. The nearest train station is Civitella Marittima/Paganico, while the reference airports are Florence and Pisa.
Food stalls are generally open on Friday evening, and for lunch (from 12:30 PM) and dinner (from 7:00 PM) on Saturday and Sunday. It is recommended to check the updated hours on official channels.
