About Pari Salsiccia Festival

Every year, on the last weekend of September, the ancient medieval village of Pari, a hamlet of Civitella Paganico in the province of Grosseto, hosts the Salsiccia Festival, one of the most beloved gastronomic events in the Tuscan Maremma. Organized by the Associazione Sette Colli since 1966, the festival celebrates the renowned 'parigiana' sausage and the authentic flavors of local peasant tradition, featuring food stalls, live music, and the evocative atmosphere of one of the most characteristic villages in the Grosseto hills.

The Pari Salsiccia Festival

The Salsiccia Festival is the most anticipated event of the year for the village of Pari, a small medieval hamlet in the municipality of Civitella Paganico, nestled in the hills of the Grosseto province, in Tuscany. Every year, on the last weekend of September, the streets and squares of the village come alive to celebrate local culinary traditions, particularly the famous 'parigiana' sausage that gives the festival its name.

A tradition since 1966

Organized with passion by the Associazione Sette Colli since 1966, the festival is much more than just a food and wine event: it is a gathering point for the entire community of Pari and for the many visitors who, year after year, reach this authentic corner of the Maremma. Decade after decade, the event has managed to preserve its genuine character, remaining faithful to the simple and flavorful cuisine of the Tuscan peasant tradition.

The flavors of the Maremma tradition

The absolute star is the parigiana sausage, served grilled according to the local recipe. Alongside it, the food stalls offer a rich selection of typical dishes:

  • Polenta alla boscaiola, with mushroom and sausage sauce
  • Wild boar tagliatelle, a symbol of Maremma cuisine
  • Grilled parigiana sausage and fegatelli (liver skewers)
  • Sausage with beans 'all'uccelletto' and mushroom soup
  • Porcini mushrooms, fried polenta, and ciaccini baked in a wood-fired oven

All accompanied by wines and typical products from the Grosseto territory, in a journey of taste that tells the story of the authenticity of the Maremma.

Music, shows, and village atmosphere

Beyond the food, the Salsiccia Festival offers evenings filled with live music, DJ sets, piano bars, and entertainment for all ages. The village squares turn into party venues, with spaces also dedicated to children, including games and baby dance. Strolling through the stone alleys of Pari, illuminated for the occasion, offers an authentic experience that combines gastronomy, conviviality, and the charm of an ancient castle of the Conti dell'Ardenghesca.

A village to discover

Visiting the Salsiccia Festival is also an opportunity to discover Pari and the territory of Civitella Paganico, amidst thermal baths, nature, and the hilly landscapes that characterize this part of the Tuscan Maremma. An unmissable appointment for those who love good food and the authentic traditions of Tuscany.
