The final autumn festival in Cascine di Buti, featuring handmade pasta and porcini mushrooms from Monte Pisano
The Stringozzo and Porcini Mushroom Festival is the event that, every year in early October, draws the curtain on the rich season of food festivals in Buti and its hamlet Cascine di Buti, in the province of Pisa, at the foot of Monte Pisano. From June to October, every weekend from Friday to Sunday, the Palio Contrade and local associations take turns in the kitchen to bring the festival area to life: this autumn event represents the grand finale of that long calendar of popular celebrations.
The signature dish is stringozzo, a rustic, fresh pasta rolled by hand and seasoned with the flavors of the forest. In October, the Monte Pisano woods offer their most prized product, the porcini mushroom, which is served here in every possible way: fried and crispy, in a fragrant soup, on toasted Tuscan bread over embers, and in the classic boscaiola sauce that accompanies meats. Alongside the porcini, there is no shortage of other great classics of local Tuscan cuisine, from grilled meats to seasonal side dishes, all washed down with local wines.
The festival is above all a gathering place for the entire community of Buti and the many visitors coming from the Pisan territory. After dinner, the evenings come alive with dance music and the 'liscio' style, the tradition that has always accompanied Tuscan festivals, turning the Cascine di Buti sports area into a large open-air dance floor. The atmosphere is that of an authentic village feast: long tables, busy volunteers, and a family-like vibe that is the true secret ingredient.
Buti is a village in Tuscany known for its Palio delle Contrade and its deep bond with Monte Pisano, a land of olive groves, chestnut trees, and woods. Attending this festival means discovering a genuine and non-touristy side of the province of Pisa, where gastronomic traditions are still alive and passed down. A perfect stop for those looking for true Tuscan peasant cuisine far from the most crowded circuits.
