The Sagra della Torta al Testo cotta sotto la cenere takes place in Sant'Egidio, a hamlet of the Municipality of Perugia near the regional airport, in the province of Perugia. Organized by ASD APS Sant'Egidio, it is one of the longest-running events in the Umbrian territory, capable of preserving and passing down an ancient gesture of peasant cuisine.
The Torta al Testo as it once was
The absolute star is the Torta al Testo, the symbolic focaccia of Umbria, here prepared according to the traditional method: cooked under the ashes, on a scorching hot stone covered with embers, which gives it a crispness and flavor impossible to replicate elsewhere. It is enjoyed stuffed in many ways, accompanied by:

The Sagra della Torta al Testo cotta sotto la cenere 2026 returns to Sant'Egidio, a hamlet of Perugia, from July 31 to August 9. Under the large covered structure in via del Deltapiano, the Torta al Testo is prepared as tradition dictates, cooked under the ashes on a scorching hot stone, and served stuffed in many variations along with typical Umbrian wines, cheeses, and desserts. Live music evenings, educational workshops, and games for children accompany the meal. Dinner reservation is mandatory via the official website.
