"Scottadito", the star dish

The name of the festival, in the Marche dialect, refers to scottadito: lamb chops seasoned with oil, salt, and little else, quickly cooked on a searing hot grill and served still piping hot, so much so that they "burn the fingers" of those who eat them by hand. It's a simple and popular dish, linked to peasant cuisine and festive days, which here becomes the common thread of the entire event.
