The traditional peasant bread of Ortelle, in the heart of Salento

In the heart of lower Salento, in Ortelle (province of Lecce, Puglia), one of the area's oldest and most heartfelt food festivals takes place every summer: the Pirilla Festival. Reaching its thirty-third edition in 2025, it is considered one of the longest-running culinary celebrations in the Lecce province, attracting visitors from all over Salento each year, drawn by a simple, identity-defining product that tells the story of the town's peasant history.
Pirilla is the typical bread of Ortelle's peasant tradition. It is made from a few simple, genuine ingredients: durum wheat semolina, water, yeast, and salt. The dough is baked in traditional stone and wood-fired ovens, which give the loaf its fragrant crust and unmistakable aroma that have made it inimitable. Once baked, the pirilla is sliced in half and enjoyed in two ways: the simplest version, seasoned only with fresh tomatoes and extra virgin olive oil, or the richer variant, stuffed with savory meat chunks, peppers, and various sauces. It is a bread meant to be eaten warm, fresh from the oven, capturing the entire gastronomic memory of the town in a single bite.
The festival is organized by the Pro Loco Ippocampo, which has managed the event since 2013 with the patronage of the Municipality of Ortelle, also involving the hamlet of Vignacastrisi. For a few evenings in August, the streets and squares of the town center fill with food stalls, the scent of freshly baked bread, and live music, featuring popular Salento sounds and entertainment for all ages. The event is part of the summer calendar of Ortelle, which in August also celebrates its patron saints San Giorgio and San Fortunato with processions, illuminations, fireworks, and concerts in the square.
Ortelle is a small town of just over two thousand inhabitants nestled between the ancient Messapian cities of Vaste and Castro, in a corner of Salento rich in history and spirituality. Those visiting the town during the festival can discover the Mother Church of San Giorgio with its Baroque altars, the Crypt of the Madonna della Grotta, carved into the rock and frescoed between the 14th and 15th centuries, and a hinterland just a few kilometers from the Adriatic coasts of Castro and Santa Cesarea Terme. The Pirilla Festival thus becomes the perfect opportunity to combine the pleasure of good food with the discovery of one of the most authentic villages in lower Salento.
The dates and detailed program for the 2026 edition have not yet been officially announced by the organizers: it is recommended to follow the channels of the Pro Loco Ippocampo and the Municipality of Ortelle for updates.
