Short-supply-chain dinners at the Museum of the Resistance in Fosdinovo
The Km Zero Festival is a food and wine event held in Fosdinovo, a charming village in the Lunigiana area of the Massa-Carrara province, in northern Tuscany. The event takes place at the Audiovisual Museum of the Resistance, home to the Archivi della Resistenza cultural and gastronomic circle, and uniquely blends dining with culture: each dinner is preceded by a book presentation and an aperitif, in a setting that makes short supply chains and historical memory its core values.
The heart of the event is the radical choice to serve dishes made exclusively with local, zero-kilometer products. No ingredients that have traveled long distances: Lunigiana cured meats, sheep and goat cheeses from local farms, seasonal vegetables, and wine produced on the surrounding hills arrive at the table. It is a concrete way to support small producers in the Lunigiana and to tell the story, through food, of the rural identity of this corner of Tuscany nestled between the Apennines and the sea.
The menu is a journey through traditional Lunigiana cuisine. Among the appetizers, hot sgabei stand out, accompanied by cured meats, cheeses, and vegetable pies. Among the first courses, there is no shortage of the famous testaroli made with ancient grains, green lasagnette, meat or ricotta and spinach ravioli, and chestnut gnocchetti. The main courses feature goat stew with polenta, Ligurian-style rabbit, cacciatore-style chicken, and parmigiana. To finish, a dessert, coffee, and a glass of Amaro Partigiano, a tribute to the spirit of the place.
The Km Zero Festival is not just a feast for the palate. Organized by the Archivi della Resistenza association, the event is part of the activities of the Edoardo Bassignani Circle, which also enlivens Fosdinovo during the summer with the "Fino al cuore della rivolta" festival. Participating also means supporting a cultural project that has been preserving the memory of the Resistance and promoting community values for years, in a panoramic setting that spans from the Apuan Alps to the coast.
The 2026 Km Zero Festival returns to Fosdinovo from June 26 to 28 with its usual short-supply-chain menu. On Friday and Saturday, the evening opens at 7:00 PM with book presentations and an aperitif, followed by dinner at 8:00 PM; on Sunday, the appointment is for lunch from 12:30 PM. The gastronomic program ranges from sgabei with local cured meats and cheeses to testaroli with ancient grains, from ravioli to goat stew with polenta, up to Ligurian-style rabbit and parmigiana, all washed down with local zero-kilometer wine.
