In the heart of the hills surrounding San Miniato, in the province of Pisa, the small village of La Serra dedicates an entire month to its most beloved specialty: the cunigliolo fritto, or fried rabbit in the local dialect. Throughout August, every Friday, Saturday, and Sunday (as well as on Ferragosto), the Circolo ARCI La Serra food stands open their doors, turning the village pavilion into a meeting place for families, friends, and fans of rustic country cooking.

The star of the show: the fried rabbit

Fried rabbit, crispy on the outside and tender on the inside, prepared according to tradition, is the undisputed star of the event. Alongside it, the menu offers other Tuscan delicacies:

• Tuscan appetizer with cured meats and crostini
• Pappardelle with rabbit sauce
• Country-style rabbit, the stewed version
• Grilled veal steak

Great attention is paid to the quality of raw ingredients: the products used come largely from farms within the Municipality of San Miniato, ensuring genuine, farm-to-table cuisine.

The Fried Rabbit Festival is more than just food: it is a community celebration that enlivens the summer evenings in La Serra. Under the marquee, among the long tables, the nights are accompanied by music and ballroom dancing, with the great hits of the 60s, 70s, and 80s getting everyone on the dance floor.
