The capital of frico

Every August, the hamlet of Carpacco, in Dignano, transforms into the capital of one of Friuli's most beloved dishes: frico. Organized by A.R.S. of Carpacco, the festival has over forty years of history and attracts visitors from all over the region to celebrate a dish that tells the story of Friulian peasant culture.

Crispy and soft frico

Frico is made from a few ingredients – Montasio cheese, potatoes, and sometimes onion – and is the symbol of a no-waste cuisine, capable of transforming leftover cheese into a delicious specialty. At the festival, both versions are served: the crispy one, thin as a wafer, and the soft one with potatoes, prepared by the cooks in front of the public in the large food stalls.

Music, Vespa, and tradition

A rich program revolves around frico: dancing evenings with orchestras, concerts, children's games, and a craft market. The highlight is the Vespa gathering, which every year brings dozens of enthusiasts to Carpacco for a ride through the Friulian hills, starting from the village square.
