Every December, Borgo San Dalmazzo, in the heart of the Cuneo Maritime Alps, celebrates the Fiera Fredda Snail Festival, one of the oldest gastronomic events in Piedmont. Established in 1569 by Duke Emmanuel Philibert of Savoy in honor of the patron saint San Dalmazzo, the fair highlights the prized Helix Pomatia Alpina alpine snail, the star of traditional menus, live cooking shows, markets, performances, and music. Five days of festivities between Palazzo Bertello and the historic center, where taste, culture, and rural roots meet during the Immaculate Conception holiday period.

A tradition spanning centuries

The Fiera Fredda Snail Festival is one of the oldest fairs in Piedmont, with roots dating back to 1569, when Duke Emmanuel Philibert of Savoy authorized the establishment of a fair in the municipality of Borgo San Dalmazzo, in the Province of Cuneo, to honor the patron saint San Dalmazzo, who was martyred on December 5th. Since then, every year around the Immaculate Conception, the event draws locals from the nearby valleys and thousands of visitors, becoming a defining identity for the entire Cuneo area and Piedmont.

The star: the Helix Pomatia Alpina snail

At the heart of the fair is the Helix Pomatia Alpina alpine snail, which finds its natural habitat in the Maritime Alps. Its light, delicate meat, with an herbaceous aroma derived from grazing freely among high-altitude aromatic herbs, makes it a rare and sought-after product. The gastronomic review "Under the sign of the snail" involves restaurants in Borgo San Dalmazzo and the surrounding valleys, which offer traditional dishes: snails prepared with green sauce, devil-style, with Nebbiolo wine, cartunera-style, borgarina-style, and the classic trio of sauces.

How to get there

Borgo San Dalmazzo is located in the Province of Cuneo, at the gateway to the Gesso and Stura Valleys. By car, it can be reached from the A6 Turin-Savona motorway (Mondovì exit) by continuing towards Cuneo, or via the SS20 road from the Tenda Pass. The Borgo San Dalmazzo train station is on the Cuneo-Ventimiglia/Limone line.

Opening hours and admission

The fair takes place from December 4th to 8th, opening on Thursday in the late afternoon and continuing on subsequent days from morning until evening. Evening events and shows are generally free of charge; for snail-based menus, booking at participating restaurants is recommended.

As this is a winter event, warm clothing is recommended. Cuneo, just a few minutes away, offers numerous accommodation options for longer stays.
