Carpione, the star of the festival
At the heart of the festival is carpione, one of the most distinctive preparations in Piedmontese peasant cuisine. It is not a type of fish, but rather a preservation method: previously fried or boiled ingredients—such as vegetables, eggs, zucchini, meat, or fish—are left to rest for at least one night in a cold marinade of vinegar, onion, garlic, wine, and sage. The result is a fresh, fragrant dish perfect for hot summer days, long associated with the tables of local farming families.

The Carpione Festival is above all a community celebration: as the Pro Loco likes to remind us, Loranzè is "a small town with many hands working together."
