It is not a type of fish, but rather a preservation method: previously fried or boiled ingredients—such as vegetables, eggs, zucchini, meat, or fish—are left to rest for at least one night in a cold marinade of vinegar, onion, garlic, wine, and sage. The result is a fresh, fragrant dish perfect for hot summer days, long associated with the tables of local farming families.

By car: Loranzè is accessible via the A5 Turin-Aosta motorway, taking the Ivrea exit, just a few kilometers from the town center. By train: Take the train to Ivrea station on the Turin-Aosta line, then use local transport or a car to reach Loranzè.
