Ancient Flavors Festival

A festival celebrating the flavors of rural Salento

The Ancient Flavors Festival (Sagra degli Antichi Sapori) is one of the most cherished local events in Cerfignano, a tiny village in the municipality of Santa Cesarea Terme, in the Province of Lecce, deep in the Salento region. Every summer, in mid-August, the small stone-paved village transforms for two nights into a massive open-air banquet, where traditional peasant recipes take center stage between Piazza Vittorio Emanuele II and the alleys of the historic center.

The cuisine of memory

The heart of the event lies in the food stalls, set up and managed by local volunteers, offering iconic dishes of humble Salento cuisine—the kind prepared by grandmothers in the countryside. Specialties served include:

• Homemade orecchiette with tomato sauce
• Fava beans and chicory with fried bread
• Salento tajeddha (potatoes, rice, and mussels)
• Eggplant parmigiana
• Pittule, pizzas, focaccias, grilled meat, and bruschetta
• Vermicelli with municeddhe snails, legumes, and panicottu
• Traditional desserts, spumone, and fresh watermelon

Great attention is paid to menu accessibility: alongside traditional stalls, there are gluten-free stations, ensuring everyone can participate in this collective dining ritual.

Folk music and village atmosphere

The evenings are accompanied by Salento folk music and the pizzica dance, which turns the square into a spontaneous dance floor. Folk bands entertain the village until late at night, creating a joyful atmosphere that engages both residents and visitors from across the Capo di Leuca area.

A local event

The festival is organized by the K. Wojtyla Parish Oratory of Cerfignano in collaboration with local associations, under the patronage of the Municipality of Santa Cesarea Terme. More than just a food festival, it is a community moment that strengthens the bond between inhabitants and their roots, celebrating a cuisine that tells centuries of rural history in Salento.
