In autumn, polenta becomes the absolute star in Val Tartano: for six weekends, the valley's accommodations offer menus entirely dedicated to polenta, from appetizer to dessert, using cornmeal grown in the valley and stone-ground. Organized by Pro Loco Val Tartano, the Accademia della Polenta combines tradition and creativity in the kitchen, with the option to stay overnight in the valley's refuges and hotels. The Accademia della Polenta is the autumn food and wine event organized by the Pro Loco Val Tartano, in the municipality of Tartano, in the province of Sondrio. For six weekends, the valley's accommodations dedicate their menus to polenta, the symbolic dish of mountain cuisine.

Tradition and innovation

Every year, chefs offer a new menu: alongside traditional dishes โ€” polenta concia, polenta taragna โ€” there are new pairings with meat, game, vegetables, legumes, and fish, as well as desserts made with buckwheat and corn, with options also suitable for vegetarians and coeliacs. The flour used comes from corn grown in the valley and stone-ground.

A weekend in the Orobie Alps

Participating establishments include Albergo Miralago, La Gran Baita, Vallunga, Rifugio Il Pirata, and Rifugio Beniamino.
