The Alpine spring of flavors in Aldino

Voldeiner Culinaria is the food and wine festival that celebrates spring in Aldino (known as Aldein in German and Volden in the local dialect), a municipality on the Regglberg plateau in the autonomous province of Bolzano, in Trentino-South Tyrol. For several weeks, from mid-May until approximately June 15th, local establishments in the village and the hamlets of Radein and Jochgrimm transform their offerings into a journey of seasonal dishes that South Tyroleans call Alpiner Frühlingsgenuss—the pleasure of Alpine spring.

What is Voldeiner Culinaria?

It is not a single square-based festival, but rather a series of culinary weeks spread across the area: restaurants, farm stays, mountain huts, and refuges offer special menus and courses that highlight fresh, regional products of the season. It is the time for spring herbs, mountain cheeses, meats, and traditional peasant dishes, creatively reinterpreted by local kitchens. The experience is accompanied by the slow rhythm typical of the low season, when the plateau is still uncrowded and nature awakens at the foot of the Corno Bianco and Corno Nero mountains.

Aldino and the Regglberg plateau

Nestled between 1,225 and 1,500 meters above sea level, about fifteen kilometers south of Bolzano, the municipality of Aldino is a panoramic balcony overlooking the Dolomites, near the Bletterbach canyon (a UNESCO World Heritage site), the Latemar group, and the Oclini Pass. Its identity is deeply rooted in mountain agriculture, alpine grazing, and the South Tyrolean culinary culture, of which Voldeiner Culinaria is one of the most authentic expressions.
