The Terento peasant cuisine week in the Puster Valley
The Terner Bauernkuchl Specialty Week is the autumn gastronomic highlight of the small village of Terento/Terenten, nestled on a sunny plateau in the Puster Valley, in the province of Bolzano, in the heart of Trentino-Alto Adige/Südtirol. For about ten days, between mid and late October, the village's farms, agritourisms, and restaurants open their kitchens to offer the most authentic flavors of local peasant tradition, bringing back to the table recipes that mountain families have passed down for generations.
The heart of the event is the Bauernkuchl, or "peasant kitchen," prepared according to traditional recipes. The menus feature specialties that still bear their original South Tyrolean dialect names: Krautsuppe (sauerkraut soup), Schwårzplentan Ribla (buckwheat pancakes) served with applesauce, Graukassuppe (grey cheese soup), Bluitnudel, Ziachkråpfn, Kirschtakråpfn, Puffa, Tirschtlan, Schnollsuppe, and Årbassuppe. These are simple, nutritious dishes rooted in mountain economy and tied to local products: ancient grains, milk, grey cheese, and herbs from the Puster Valley.

The week is part of the autumn calendar of peasant cuisine in Alto Adige/Südtirol and complements other village events, such as the Almabtrieb (transhumance) and the Mill Festival. For visitors, it is the ideal opportunity to discover an authentic corner of the Puster Valley, far from the main tourist flows, amidst genuine flavors, golden autumn landscapes, and the hospitality of the farms. The initiative is organized by the Terento Tourist Association (Tourismusverein Terenten) as part of the "'s Terner Schmelzpfandl" offering.
From October 16 to 25, 2026, Terento/Terenten in the Puster Valley hosts the new edition of the Terner Bauernkuchl peasant cuisine week. The 2026 calendar includes the opening evening at Schmelzpfandl with a four-course menu (October 17), peasant breakfasts with farm tours (October 18, 23, 24, and 25, approx. €25 per person), mill visits (October 19, 10 am - 2 pm), a farmers' market with an exhibition of historical agricultural tools (October 19, 9:30 am - 4 pm), a gourmet hike with an herb workshop (October 22), and, in closing, ancient craft demonstrations and food stands. Seven local farms and inns are at the stoves, including Alpeggerhof, Naturhotel Edelweiss, Hohenbichl, Montara, Tirolerhof, and Wiedenhofer.
Terento/Terenten is located on a plateau above the Puster Valley (province of Bolzano). By car: take the Rio di Pusteria/Mühlbach exit and drive up towards the Terento plateau. By train: Rio di Pusteria-Terento station on the Puster Valley line, then take the local bus to the village.
Every year in the second half of October, for about ten days.
Tasting dishes at farms and restaurants is paid according to the menu. Some program activities require a fee (e.g., peasant breakfasts approx. €25/person, themed dinners, hiking workshops), while others are free. Mill visits and the farmers' market have free admission.
