The Pitti Immagine food and wine excellence fair at the Fortezza da Basso in Florence
Taste is the food and wine fair conceived and organized by Pitti Immagine, which since 2006 has brought the best of Italian and international food production to the Fortezza da Basso in Florence. Located in the heart of the Tuscany capital, the event has become one of the most anticipated appointments for food lovers, industry professionals, restaurateurs, and curious gourmets, who flock to the pavilions of the historic Medici fortress every winter.
The heart of the event is the Taste Tour, an itinerary among exhibiting companies that winds through the various pavilions of the Fortezza. It starts at the Attic floor of the central pavilion with the world of savory products, continues to the ground floor, and arrives at the Cavaniglia Pavilion, where sweet flavors and the Taste Spirits section—dedicated to artisanal spirits and liqueurs—dominate. There are also thematic spaces such as Heroic Wines, dedicated to the heroic viticulture of Italy's most rugged areas.
Beyond the exhibition area, Taste offers a rich calendar of cultural appointments: the Taste Ring, meetings led by gastronome and journalist Davide Paolini, and the Taste Talks, discussion panels on topics such as sustainability, fermentation, supply chains, and the impact of climate change on food production. It is an opportunity to get to know the stories of producers, raw materials, and the territories behind every product.
Parallel to the fair, the city of Florence hosts FuoriDiTaste, a widespread program of tastings, dinners, presentations, and events in the most evocative venues, restaurants, and spaces of the historic center. The fair thus becomes an experience that extends beyond the walls of the Fortezza, involving the entire city and intertwining gastronomy, culture, and social life.
With hundreds of exhibiting companies, many of which are debuting at each edition, Taste offers an updated and in-depth snapshot of contemporary food and wine culture, blending tradition and innovation. The Municipality of Florence and the Tuscany region provide the ideal setting for an event that combines the international vocation of Pitti Immagine with the richness of the local gastronomic heritage.
The 19th edition of Taste was held from February 7 to 9, 2026, at the Fortezza da Basso in Florence, with the theme True Food, focusing on authenticity: real raw materials, concrete processes, and credible stories, for a return to the essence of food as an expression of people, supply chains, and places.
Over 750 exhibiting companies participated, with more than a hundred making their debut. The Taste Tour wound through the Attic floor dedicated to savory flavors and the Cavaniglia Pavilion with sweet products and the Taste Spirits section. The Taste Ring meetings led by Davide Paolini, the Taste Talks, and the widespread FuoriDiTaste program in the city's venues were also highlights.

The Fortezza da Basso is located just a few steps from the Florence Santa Maria Novella railway station, reachable on foot in about 10 minutes. By car, the reference motorway exits are Florence North or Florence Scandicci on the A1, with parking available in the surrounding areas. The tramway and numerous bus lines connect the area to the rest of the city.
Admission is paid, with tickets available via the PittiSmart app and online. The fair is reserved for professional operators in the early hours of the day and opens to the public of enthusiasts in the afternoon.
