About Tarallo Lab

Tarallo Lab is a three-day event in Palo del Colle, in the heart of the Bari Metropolitan City, that transforms the tarallo—the famous Apulian ring-shaped baked snack—into a catalyst for community development. From March 6th to 8th, 2026, at the Laboratorio Urbano Rigenera, producers, artisans, young people, designers, and administrators will work side-by-side in thematic workshops focused on supply chains, identity, and local networks. It is not just a food festival, but a true laboratory of ideas inspired by the "meridian thought," featuring bakery tours, community dinners, and the final Tarallo Party.

The tarallo as a community project

In Palo del Colle, a town in the Bari Metropolitan City known as the "capital" of the tarallo, this small baked ring is more than just a snack: it is a piece of collective identity. Tarallo Lab was created to capture that legacy and project it into the future, turning a consolidated tradition into a modern tool for local development, quality employment, and territorial cooperation. It is not a festival in the traditional sense, but an open three-day workshop where the community works on its own gastronomic symbol.

Three thematic workshops

The heart of the event consists of three workshops held at the Laboratorio Urbano Rigenera, on Viale della Resistenza, where young people, businesses, citizens, administrators, designers, and creatives collaborate side-by-side:

  • Workshop 1 — Brands, supply chains, and markets: how to build a shared brand and new commercial outlets for the Palo del Colle tarallo.
  • Workshop 2 — Identity, language, and communication: how to tell the story of the product without reducing it to mere folklore.
  • Workshop 3 — Alliances, networks, and community: how to connect producers, institutions, and the territory through light governance.

Inspired by "meridian thought"

The cultural framework of the event is the "meridian thought" of sociologist Franco Cassano: a vision of development for the South that is non-extractive, cooperative, and rooted in the local area, capable of rejecting both nostalgia and an inferiority complex toward major urban centers. From this perspective, the tarallo becomes the catalyst for rethinking the economy and the narrative of the entire territory.

Who drives the laboratory

The initiative is promoted by the Municipality of Palo del Colle together with Consorzio Mestieri Puglia and Laboratorio Urbano Rigenera, with coordination by the Rural Hack project led by Professor Alex Giordano of the University of Naples Federico II. Experts in agri-food and territorial communication will join the tables, alongside centers of excellence such as the Consorzio del Pane di Altamura, the Slow Food Presidium for the Biscotto di Ceglie, and the OP Mandorla di Toritto.

Palo del Colle, in Puglia

For Palo del Colle and Puglia, hosting Tarallo Lab means betting on innovation by starting from one's own roots. Participation is free and open to everyone, with no specific skills required: the invitation is extended to all—especially those under 35—who wish to play a role in the tarallo supply chain, from historic local bakeries to new creative enterprises.

Tarallo Lab — edition 2026

The first edition of Tarallo Lab took place in Palo del Colle from March 6th to 8th, 2026, at the Laboratorio Urbano Rigenera. Three days of plenary sessions, thematic workshops, bakery tours, and social moments brought together over sixty participants to discuss the future of the tarallo, covering shared branding, identity, and community networks, culminating in the Saturday night Tarallo Party.

The first edition of Tarallo Lab enlivened Palo del Colle from March 6th to 8th, 2026, attracting over sixty participants to the Laboratorio Urbano Rigenera, including producers, artisans, young people, designers, and administrators, some arriving from neighboring towns.

The work, divided into three thematic workshops, produced concrete proposals: the creation of a shared visual identity and logo among producers, the strengthening of the brand and territorial marketing, the launch of a path toward IGP or DOP certification, and the construction of a collective entity capable of bringing companies together while maintaining the specificities of each. On Sunday, for International Women's Day, a special moment paid tribute to the "mothers of the tarallo," guardians of local recipes and knowledge.

Palo del Colle is located about 20 km from Bari. By car, it can be reached via the SS96 or SP231; by train, it is served by the Ferrotramviaria Bari–Barletta line, with the Palo del Colle station located a short distance from the town center.

Admission to workshops, meetings, and social events is free and requires no specific skills. Booking is recommended via the Laboratorio Urbano Rigenera or the Municipality of Palo del Colle.
