The tradition of the bread of the dead in Terlizzi

In the town of Terlizzi, located in the province of Bari in the heart of central Puglia, All Souls' Day is not just a moment of reflection, but also an opportunity to renew one of the town's most iconic gastronomic traditions: the Quartecèdde Festival. Every November 2nd, in Piazza Plebiscito, the Terlizzi community gathers to taste a bread with an unmistakable shape and an ancient flavor.
The quartecèdde (literally "a quarter-kilo of bread") is a typical tapered bread shape, similar to a pair of elongated rolls, which has been passed down through centuries of Terlizzi tradition. The bread is filled with a "lean" stuffing: sharp ricotta (ricotta forte) as a base, enriched with tuna or salted anchovies. The sharp ricotta, due to its color and consistency, recalls the lime once used in ancient burials: it is this detail, linked to the memory of the departed, that explains the deep connection between the food and the November 2nd commemoration.
The origins of this rural custom are lost in time, rooted in the popular culture of the Apulian countryside, where the memory of lost loved ones intertwines with the daily gestures of shared food. The festival, promoted by the Municipality of Terlizzi together with the Immacolata Parish, has successfully renewed this memory, transforming it into a highly anticipated community event that attracts families, curious visitors, and enthusiasts of popular traditions.
The day of November 2nd combines a religious dimension with a public celebration. Typically, Holy Masses are celebrated in the morning and evening at the Immacolata church, followed by the blessing of the Cross in Piazza Plebiscito. In the evening, the square comes alive with the tasting of the quartecèdde and live musical entertainment, in a convivial atmosphere that warms the autumn evening.
The Quartecèdde Festival is much more than a tasting: it is a collective ritual that keeps the bond between generations alive and tells the story of Terlizzi's rural soul. For those visiting Puglia in autumn, it represents an authentic opportunity to discover a flavor and a tradition that are hard to find elsewhere.
The Quartecèdde Festival returns, by tradition, every November 2nd for All Souls' Day in the Municipality of Terlizzi (province of Bari). As of the publication date, the program and official confirmation for the 2026 edition have not yet been released.
As is customary, the day should combine Holy Masses at the Immacolata church, the blessing of the Cross in Piazza Plebiscito, and the evening tasting of the quartecèdde—the tapered bread filled with sharp ricotta, tuna, or salted anchovies—along with live musical entertainment. It is recommended to check for updated information on the Municipality of Terlizzi's channels closer to the date.
Terlizzi is located in the province of Bari, well-connected by the SS16bis road and the Bari metropolitan area road network. By train, it can be reached via the Terlizzi station on the Bari-Barletta Ferrotramviaria line. From Bari-Palese airport, it takes about 30-40 minutes by car.
The heart of the festival is Piazza Plebiscito, in the historic center of Terlizzi, easily accessible on foot. It is recommended to park in the areas surrounding the center.
The event is held outdoors in the evening: bring clothing suitable for the autumn season. The tasting is intended as a convivial moment open to the public.
