The ancient tradition of the nivaroli in the Madonie mountains, featuring high-altitude hiking and granita made with fresh snow.
The Snow Festival takes place in Polizzi Generosa, a mountain village in the province of Palermo, located in the heart of the Madonie Park. Organized since 1999 by the local branch of the Italian Alpine Club (CAI), the event honors the ancient trade of the nivaroli (known as nivaloru in the local dialect), the workers who would climb toward the neviere (snow pits) with their mules during spring and summer to harvest packed snow.
The neviere were deep natural pits, shielded from the sun, where large quantities of snow accumulated during winter, often lasting until the following summer. The nivaroli would compress the snow and insulate it with layers of straw, creating true ice reserves. This snow was then transported by mule to Polizzi and coastal towns, where it was used to preserve food and prepare refreshing drinks and granita. This practice, which local sources trace back to the centuries of Spanish rule, is preserved and celebrated through this festival.
The highlight of the day is the hike to the Fossa della Principessa at an altitude of 1,906 meters. It is the largest and deepest of a group of five natural snow pits, a remarkable geological formation on the northeastern side of the peak of the same name. The trail winds through valleys, dense beech forests, and rocky summits, offering sweeping views across the entire Madonie massif.
Once at the summit, participants watch and take part in the preparation of traditional Sicilian granita, made according to the original recipe using snow gathered on-site, mixed with fruit juices and syrups. It is the most anticipated and symbolic moment of the festival: enjoying a granita made with Madonie snow, right where the nivaroli once worked.
Beyond the hike and the tasting, the festival is an opportunity to explore the territory of Polizzi Generosa, its natural beauty, and its historic sites. Activities may include camping options and opportunities to explore the Park's environment, supported by local associations such as the Santa Elisabetta Speleological Group, a guest of the Polizzi CAI section.
The 2026 Snow Festival in Polizzi Generosa is scheduled for Sunday, July 19, 2026, following the customary date of the third Sunday of July. Once again this year, the event, organized by the Italian Alpine Club section of Polizzi Generosa, will revolve around the hike to the Fossa della Principessa (1,906 m) and the preparation of traditional Sicilian granita using snow from the Madonie.
The detailed program for the 2026 edition, including times, meeting points, and participation details for the hike, has not yet been published. It will be announced by the organizers in the weeks leading up to the event.
