The historic single-ingredient festival dedicated to salt cod in the Val Vibrata
The Salt Cod Festival is one of the most deeply rooted and well-known culinary events of the Abruzzo summer. Every year, during the last week of July, the historic center of Sant'Omero, a small town in the Val Vibrata in the province of Teramo, transforms into what the organizers love to call the "home of salt cod." The festival is organized by the Pro Loco Sant'Omero APS, which has been managing the event for over forty years with the help of local volunteers and chefs.
What makes this festival special is its single-ingredient nature: only one food is cooked, salt cod, but prepared in dozens of different ways. The extensive and carefully curated menu offers both traditional recipes and more creative reinterpretations. Signature dishes include spaghetti with salt cod, salt cod in tomato sauce with potatoes, roasted salt cod, fried salt cod, stewed salt cod, and the classic salt cod with chickpeas. The stalls remain open for both lunch and dinner.
Sant'Omero's strong bond with salt cod is no coincidence: the Monti company, historically one of the main importers of this fish in Italy, has been based here since 1903. For over a century, salt cod has been part of the local identity and culinary tradition, and every summer the festival celebrates its gastronomic and cultural value.
The event has been awarded the prestigious "Quality Festival" mark by UNPLI (National Union of Pro Loco of Italy), a recognition reserved for traditional events that have an authentic connection to the territory and are capable of creating synergies with local economic activities. It is a guarantee of authenticity, respect for traditional recipes, and attention to the quality of raw materials.
Beyond the table, the festival offers evenings of live music in the town squares, wines from the Teramo Hills to accompany the dishes, and a convivial atmosphere that attracts visitors from all over Abruzzo and neighboring regions. The proceeds from the initiative support the cultural activities of the Pro Loco. The 45th Sant'Omero Salt Cod Festival is confirmed from July 19 to 25, 2026. As per tradition, the Pro Loco stalls will offer salt cod in its numerous variations: from spaghetti with salt cod to salt cod in tomato sauce with potatoes, as well as roasted, fried, stewed, and with chickpeas, with lunch service also available. The complete calendar of evenings, with shows and live music, will be announced by the organizers in the weeks leading up to the event.

By car: from the A14 motorway, take the Val Vibrata exit, then head towards Sant'Omero; from L'Aquila and the interior via the SS80 and provincial roads. The reference railway station is Alba Adriatica-Nereto-Controguerra, on the Adriatic line, from where you can continue by car towards the inland.
