About S prov e s'appil

Every November, for St. Martin's Day, the village of Roseto Valfortore (FG) lights up along Corso Roma with "S prov e s'appil", a food and wine evening that pairs local Roseto cuisine with the aroma of new wine. The name, in the local dialect, means "taste and cork it": an invitation to wander through the historic centre, enjoying tastings, local products, and live music, following the ancient custom that marks the St. Martin's period, when the must turns into wine.

A St. Martin's evening in the 'diVino' village

San Martino – S prov e s'appil is the food and wine event that, in the heart of autumn, brings Corso Roma and the historic centre of Roseto Valfortore to life. This enchanting village in the Province of Foggia is nestled in the Monti Dauni, in Puglia. The event celebrates St. Martin's Day, when rural tradition dictates that the must transforms into wine and cellars open their barrels of new wine.

The meaning of "S prov e s'appil"

The event's name is in the Roseto dialect and literally means "taste and cork it": an invitation to try, sip after sip and bite after bite, the flavours of the region. It is the perfect formula to describe the spirit of the evening, an immersion into local cuisine and the scents of freshly drawn wine, as required by the centuries-old custom of the St. Martin's period.

What to taste

Along the food and wine route set up in the village, you can savour the specialities of Roseto cuisine, prepared according to genuine, handed-down recipes. Recent editions have featured:

  • Cavatelli with pumpkin, a symbolic dish of the local autumn table;
  • Truffle and caciocavallo risotto, which showcases the prized truffle of the Monti Dauni;
  • Fried potatoes, peppers, and sausage, a traditional convivial dish;
  • New wine from the region, the absolute stars of the St. Martin's festival.

Music and atmosphere

The gastronomic stroll is accompanied by live music and musical selections that enliven the streets of the centre until late. Between the accordion, mandolin, and popular Daunian sounds, the village transforms into an open-air lounge where tastings and conviviality define the entire evening.

Roseto Valfortore, one of Italy's most beautiful villages

The event is also the perfect opportunity to discover Roseto Valfortore, awarded the Orange Flag by the Touring Club and included among The Most Beautiful Villages in Italy. Situated at an altitude of about 650 metres in the upper Fortore river valley, the town is known as the "village of stonemasons" for its ancient mastery of stone carving. Narrow alleys, sculpted portals, and stone houses provide the backdrop for an evening that weaves together taste, tradition, and the identity of the Monti Dauni.
