Pigeon in carriage is an authentic specialty of Umbrian peasant cuisine: a dish born from simple but expertly prepared ingredients, slow-cooked and enclosed in intense aromas. It is this dish that gives its name to the festival in San Fortunato della Collina, a hilly hamlet in the Municipality of Perugia, which dedicates ten evenings of celebration to it every year.
