Chamois in civet, a taste of the high mountains in Gran Paradiso
The Sagra del Civet, also known by the patois name Fiha di Civet, takes place in Valsavarenche, a municipality in the Aosta Valley that lies entirely within the Gran Paradiso National Park, in the province of Aosta. It is the quintessential summer food and wine event of the town, organized by the Pro Loco Valsavarenche at the Dégioz pavilion, the main village.
The absolute star is the chamois in civet, a traditional mountain dish. The meat is marinated for several days in abundant wine flavored with spices and then slow-cooked stewed, until a robust and aromatic stew is obtained. Served with polenta, the civet tells a story of hearty cuisine, linked to hunting and the alpine environment, capable of warming even the high-altitude August evenings.
The festival is traditionally held on the second Saturday of August. The dinner, prepared by Pro Loco volunteers, is served in multiple shifts and with the option of takeaway, by reservation, to manage the flow of guests. After dinner, the celebration continues with music and dancing, in a convivial atmosphere that brings together locals, holidaymakers, and hikers passing through the Park. For those visiting the Aosta Valley in summer, the Fiha di Civet is an authentic opportunity to savor Aosta Valley gastronomic culture right in the territory where it originated.

Valsavarenche can be reached by car from Aosta, exiting at Villeneuve from the main road and driving up the valley towards Gran Paradiso to the hamlet of Dégioz. There are no train stations in the valley: the nearest is Aosta.
