In Pontinia, the signature dish of the Ferrarese settlers who reclaimed the Agro Pontino
The Pontinia Ferrarese Cappelletto Festival is perhaps the most defining gastronomic event of the Municipality of Pontinia, in the province of Latina, in southern Lazio. It does not celebrate a local product born here, but a dish that arrived from afar: the traditional Emilian cappelletto in broth, brought in the 1930s by Ferrarese settlers who, along with Venetian and Friulian families, were relocated to the Agro Pontino for the reclamation of the marshes and the founding of new cities.
That festive dish, prepared by hand in the kitchens of the farmhouses, has become over the years a distinctive trait of Pontina cuisine, passed down from generation to generation along with the dialect and surnames of Emilian origin. The festival was created precisely to give this heritage a moment of public recognition.
The heart of the event is the tasting of cappelletti in broth, prepared by the members of the Ferraresi dell'Agro Pontino Association and the Pro Loco according to the traditional recipe: thinly rolled dough, meat and cheese filling, and hand-closed one by one. The portion is served for a symbolic contribution, thanks to the support of the Municipality and the Lazio Region.
Alongside the signature dish, the stalls in Piazza Indipendenza offer a wider food and wine selection at fixed prices, with specialties that blend Emilian, Abruzzese, and Laziale roots:
The festival is not just a tasting tour. Each edition includes a taste workshop where the sfogline (pasta makers) show live how to roll the dough and how to close the cappelletto: a highly anticipated moment, also open to children, which turns tradition into a skill to be learned.
The afternoon is accompanied by live music, with bands ranging from 1950s swing to ballroom dancing, and entertainment for families. When the calendar brings the festival close to the Carnival period, the square fills with masks and the party ends with dances for adults and children.
Inaugurated in 1935, Pontinia is the fourth of the planned cities of the Agro Pontino and retains a recognizable rationalist urban layout, with the central square as the hub of civic life. It is precisely Piazza Indipendenza, with the nearby Social Center on Via Cesare Battisti that hosts indoor spaces in case of bad weather, that serves as the setting for the festival.
Visiting the event therefore means coming into contact with a little-told part of Lazio's history: that of internal Italian migrations, total land reclamation, and the communities that, in just a few seasons, built towns, countryside, and traditions from scratch. The cappelletto, in this story, is much more than a first course.
Scheduled for the first weekend of January and postponed due to adverse weather conditions, the second edition of the festival was held on February 7 and 8, 2026, coinciding with the Carnival period. The event, organized by the Pro Loco of Pontinia and the Ferraresi dell'Agro Pontino Association with the Municipality and the support of the Lazio Region, took place in Piazza Indipendenza with the Social Center on Via Cesare Battisti as an alternative venue in case of rain.
The heart of the two days was the tasting of handmade cappelletti in broth, offered for a contribution of 5 euros per portion. Alongside this, there was a wide gastronomic selection at fixed prices and a demonstration workshop dedicated to the preparation of the cappelletto, also open to children.
In case of rain, the entire event was moved to the covered premises of the Social Center on Via Cesare Battisti.
By car: from Rome, take the SS148 Pontina to the exit for Pontinia, about 80 km. From Latina, the SS7 Appia and the SP Migliara lead to the center in about twenty minutes.
By train: the nearest station is Latina (Rome Termini - Naples line), connected to Pontinia by Cotral bus lines.

The festival is held in mid-winter: warm clothing is recommended for staying in the square. Cappelletti portions are limited, so it is best to arrive when the stalls open at noon.
