A peasant dish that became a symbol of Latera

The pizzicotto was not born in a professional kitchen, but in front of the communal wood-fired oven. When there was more bread dough than the oven could hold, the women of Latera would pinch off irregular pieces with their fingers—hence the curious and affectionate name for this rustic pasta shape. Dropped into boiling water, these pieces became a quick, filling, and virtually cost-free meal. The dough is the same as bread—flour, water, salt, and natural yeast—and this extreme simplicity is exactly what makes it a small gastronomic treasure of the Viterbo Tuscia today.

The village's social life once revolved around the oven: it was a time for gathering, chatting, and taking a break from household chores. These collective gestures have largely faded with the pace of modern life, and the festival was created specifically to keep them from disappearing entirely.

The festival at the Museum of the Earth

The event is held in the spaces of the Museum of the Earth on Via dell'Osteria, the cultural institution in Latera that preserves the memory of the peasant civilization of the Upper Tuscia.
