In the heart of summer, San Paolo di Civitate, a small town in the Alto Tavoliere area of Foggia province, rediscovers its rural roots with the Pancotto and Traditional Sanpaolese Dishes Festival. The event, traditionally held in August in Piazza Aldo Moro, is much more than a simple tasting: it is a collective ritual that gathers the entire community around the simple, genuine flavors of the past.
The absolute star is pancotto (known locally as pan'cotto), the iconic dish of Puglian peasant cooking: stale bread cooked and flavored with wild greens, olive oil, and local herbs. Born from the necessity and wisdom of the Alto Tavoliere farmhands, this dish has become a point of pride and a way to share the town's gastronomic history.
Alongside the pancotto, the festival menu features other traditional Sanpaolese specialties: pork soffritto served with local bread slices, local cheese, and wheat cooked with chickpeas and grape must syrup, a rustic dessert that perfectly rounds off the culinary journey. Dishes are accompanied by local water or wine.
The evening is not just about well-laden tables: the square comes alive with folk music from local bands, while the surrounding streets host markets featuring agricultural and artisanal products, alongside creative workshops and games for children. It is an event designed for all ages, blending gastronomy, folklore, and community spirit.
The event is promoted by local associations, particularly the DeSaLeo APS cultural association and the Cumbagnii d'u Pann'cott, with the patronage of the Puglia Region and the involvement of the San Paolo di Civitate municipal administration. The goal is to promote local food and wine traditions and keep alive the memory of a cuisine that has nourished generations of Sanpaolesi.
