May Day in the Valdera village becomes a celebration dedicated to the Tuscan crostino
The Palaia Crostino Festival is one of the most beloved gastronomic events on the Tuscan spring calendar. It takes place every year on May 1st, coinciding with Labor Day, and brings the small village of Palaia, in the province of Pisa, to life, nestled among the hills of the Valdera. For an entire day, the streets of the historic center and Piazza del Mercato are filled with stalls, aromas, and music, in one of the most authentic village festivals in the Pisan territory.
The heart of the festival is naturally the Tuscan crostino, a simple and iconic recipe that is offered here in many variations. The crostini feature traditional chicken liver pรขtรฉ, as well as tomato, olives, cured meats, prosciutto, and local cheeses: every bite tells the story of the flavors of the Pisan countryside. Alongside the crostini, the Pubblica Assistenza stalls offer other local specialties, in a culinary journey designed to satisfy every palate.
The day is not just about good food. A craft and local products market winds through the village, while live music accompanies guests throughout the afternoon. For families, bouncy castles and spaces dedicated to the little ones are set up, making the festival an occasion for celebration for all ages.
Visiting the Crostino Festival is also an excellent excuse to discover Palaia, a medieval village that overlooks the Valdera with its picturesque views, parish churches, and an enogastronomic tradition also linked to truffles. The event is organized by the Pubblica Assistenza of Palaia with the patronage of the municipal administration, confirming the strong bond between the festival and the local community. An appointment that, edition after edition, continues to combine conviviality, solidarity, and the most genuine flavors of Tuscany.
The 49th edition of the Palaia Crostino Festival was held on Friday, May 1st, 2026, confirming the traditional May Day appointment in the Valdera village. Organized by the Pubblica Assistenza of Palaia with the patronage of the Municipality, the day enlivened Piazza del Mercato and the historic center with food stalls, a craft market, and festivities for all ages.
Every year on May 1st, from morning until evening. The kitchen opens at approximately 11:00 AM, while the stalls featuring local products are active from the morning.

By car: Palaia can be reached from the FI-PI-LI highway by taking the exit towards Pontedera, then following the signs for Valdera. By train: the nearest station is Pontedera-Casciana Terme, from which you can continue by car or local connections.
Admission to the festival is free. You only pay for what you consume at the food stalls.
