About Salt Cod Festival

In Somma Vesuviana, nestled at the foot of Mount Vesuvius, the Norwegian Stockfish and Salt Cod Festival celebrates a product that has linked this Vesuvian town to Northern Europe for four centuries. In the square of Santa Maria del Pozzo, traditional local dishes, BaccaLab show cooking sessions with Michelin-starred chefs, tammurriata music, and historical re-enactments take center stage, while underground crypts, the castle, and archaeological sites remain open into the evening. An event that blends cuisine, history, and heritage.

The festival of the Italian capital of salt cod

The Norwegian Stockfish and Salt Cod Festival is the most iconic food and wine event in Somma Vesuviana, a town in the Metropolitan City of Naples, Campania, situated on the northern slopes of Vesuvius National Park. Originally launched as the Stockfish and Salt Cod Feast—long known by the title "Ancient Flavors and Sounds of Vesuvius"—the event has grown with each edition into a true festival, featuring a program that combines gastronomy with conferences, performances, and special openings of the city's monuments.

The event is organized by Pro Loco Vesuvia, with the patronage of the municipal administration led by Mayor Salvatore Di Sarno and the support of the Campania Region. Local restaurateurs, merchants, and artisans are all actively involved in the organization.

A four-century-old history

The bond between Somma Vesuviana and dried cod from the North is no recent invention. Local sources trace the introduction of the product to the initiative of a Venetian merchant, Guglielmo Samuelli, and date back to around 1563 the moment when the Church's dietary rules, with their numerous lean days, made stockfish and salt cod staples of popular cuisine. Since then, the town has developed a specialized soaking and processing supply chain that has earned it the reputation of Italian capital of stockfish and salt cod, a story the festival continues to tell through conferences and direct exchanges between Somma Vesuviana and Norway.

The square, the dishes, and the BaccaLab

The heart of the event is the square of the Santa Maria del Pozzo Monumental Complex, where the food area is set up with stalls from local restaurateurs; in the past, the festival has also occupied Piazza Vittorio Emanuele III. The menu features classic local repertoire—fried salt cod, paccheri pasta with stockfish, salt cod-stuffed cannelloni, soups, and seafood salads—almost always paired with other local Vesuvian products, starting with the piennolo cherry tomato.

The most popular section is the BaccaLab: a series of show cooking events where Michelin-starred and executive chefs from Campania cook live, explaining techniques for soaking, cooking, and pairing. Alongside the show cooking, there are demonstrations of stockfish and salt cod processing, a traditional craft that has defined the town's life for generations.

Folk music, re-enactments, and performances

The entertainment draws heavily from Campanian tradition. During the festival evenings, tammurriata folk music and traditional songs, performances by local theater companies, period dances, pistonieri (musketeers) parades, and cabaret acts take place. Some editions have featured historical re-enactments set between the 16th and 19th centuries, with costumed participants. The traditional finale is the "Burning of the Bell Tower" show, featuring lights, fireworks, and music on the bell tower of Santa Maria del Pozzo.

Heritage open by night

During the event, the city's historical and archaeological heritage remains open for special visits. Highlights include:

  • the underground crypts of Santa Maria del Pozzo, also open in the evening;
  • the Castle of Lucrezia d'Alagno, linked to the noblewoman beloved by Alfonso of Aragon;
  • the Villa Augustea, one of the most important Roman archaeological sites on the northern side of Vesuvius;
  • the Museum of Peasant Civilization and the ancient village of Casamarciano;
  • the Collegiate Church of Santa Maria Maggiore and the Sanctuary of Santa Maria a Castello, on the slopes of Mount Somma.

Numbers and audience

The 2024 edition demonstrated the event's growth: approximately 20,000 attendees over three days, nearly 13,000 meals served, and over one thousand kilograms of stockfish and salt cod consumed, with Sunday alone attracting ten thousand people. These figures are seen by organizers as a sign of cultural tourism that goes beyond just the local area.

When it takes place

The event is traditionally held in October, between the second half of the month and the last weekend, spanning three days from Friday to Sunday. Dates vary from year to year and are announced by Pro Loco Vesuvia and the Municipality a few weeks before the event: it is advisable to check the official channels.
