The Ventricina Festival celebrates the most renowned gastronomic product of Montenero di Bisaccia, in the province of Campobasso: ventricina, a cured meat recognized as a Traditional Agri-Food Product (PAT) of Molise. Although widespread throughout the region, the most famous ventricina is precisely that of Montenero.

A cured meat with a decisive flavour

The Ventricina of Montenero is produced with lean pork thigh meat, lard, salt, sweet paprika, chilli pepper, and fennel flowers: the pieces are seasoned for about 24 hours and then stuffed into the pig's bladder. The result is a noble cured meat with an unmistakable flavour, still handcrafted today according to local charcuterie traditions.
