The grand Primiero dumpling festival in the heart of the Dolomites
The Knödelfest — Dumpling Festival is one of the most beloved gastronomic events in Trentino and the highlight of the summer in Imèr, a small town in the Primiero Valley, in the province of Trento (Trentino-Alto Adige). At the foot of the majestic Pale di San Martino, the main street of the village is closed to traffic for an entire weekend and transformed into a massive open-air banquet: over 800 tables and benches and 15 food stalls welcome the thousands of visitors who reach the village every year.
The canederlo (Knödel in German) is one of the signature dishes of the Trentino and South Tyrolean tradition: once a humble "leftover" dish created to avoid wasting stale bread, it has now become a true emblem of the region. At the Knödelfest, you can find more than twenty versions, savory or sweet, served in broth or dry: from the classics with speck and melted butter to more creative interpretations with pumpkin, mushrooms, nettle, ginger, turmeric, or Lamon IGP beans, not to mention certified vegetarian, vegan, and gluten-free options. The dumplings are served by local hoteliers and restaurateurs, paired with Trentino wines, beers, and grappas.
The Knödelfest is about more than just food. The program features live Tyrolean music with bands arriving from Tyrol and South Tyrol, parades with folk groups, cooking shows dedicated to the preparation of dumplings, workshops and games for children, street performances, guided hikes, and local craft markets featuring handmade wooden objects, lace, embroidery, and jewelry. The lighthearted election of Miss and Mister Canederlo is the unmissable highlight of the festival.
The event was born almost as a prank from an idea by Hanna Wittmann and Silvano Angelani: the first edition prepared just 150 dumplings, which sold out in an hour. Since then, the festival has grown into an event capable of attracting over 20,000 people in a single weekend, making it one of the most popular in all of Trentino. It is the perfect opportunity to discover the Primiero Valley, its mountain cuisine, and the hospitality of the Dolomites.
The 2026 edition of the Knödelfest marks an important milestone: the 20th anniversary of the Imèr Dumpling Festival. Join us on Saturday, September 5 and Sunday, September 6, 2026 in the historic center of the village, in the Primiero Valley. As per tradition, over 20 varieties of dumplings — savory or sweet, in broth or dry, with meat, cheese, or vegetables, including vegan and gluten-free versions — will be served by local hoteliers along with Trentino wines, beers, and grappas.
Alongside the tastings, the program includes live Tyrolean music, a parade with folk groups, "How to make dumplings?" cooking shows, a petting zoo, horse-drawn carriages, street performances, workshops and a treasure hunt for the little ones, as well as the fun beer challenge and the highly anticipated election of Miss and Mister Canederlo.
The detailed program with final times and musical guests for the 20th-anniversary edition will be published on the official website festadelcanederlo.it in the weeks leading up to the festival.
