As the year begins and winter settles over the hills of the Province of Siena, one of the most anticipated and beloved events for food lovers returns to Rapolano Terme: Frittelle in Festa. For over two months, from January until the end of March, this historic Tuscan spa town is filled with the unmistakable aroma of freshly fried rice fritters, prepared according to the local traditional recipe.
The Rapolano fritters are a small masterpiece of rustic simplicity: crispy on the outside, soft on the inside, and generously coated in sugar. They are made with just a few wholesome ingredients—rice, milk, sugar, and eggs—following the wisdom of the town's grandmothers, passed down through generations. Served warm and fragrant, they are best enjoyed on the spot or taken home in a paper cone. For those with a sweet tooth, a cream-filled version is also available.
This dessert is deeply rooted in the Tuscan winter tradition, linked to the fritters of St. Joseph and the Carnival period, when the entire region fries dough in honor of Father's Day and the arrival of spring.
The heart of the event is the stand set up in Largo XX Settembre, where volunteers from the Settembre Rapolanese Cultural Association fry and sell the fritters several times a week. The sales bring the center of Rapolano Terme to life throughout the event, involving locals and visitors alike in a festive, convivial atmosphere that has become part of the town's identity.

The 2026 edition was held in Rapolano Terme from January 10 to March 22, accompanying the entire Sienese winter right up to the threshold of spring. The rice fritters, crispy on the outside and soft on the inside and covered in sugar, were prepared and sold at the Largo XX Settembre stand by volunteers from the Settembre Rapolanese Association.
