In the small village of Specchia Gallone, part of the municipality of Minervino di Lecce in the province of Lecce, the Friseddhra Festival is one of the most anticipated and heartfelt summer events in lower Salento. Established in the late 1980s and reaching its 37th edition in 2025, the festival is organized by the Sant'Anna Cultural Association with the aim of promoting and passing down local traditions, starting with the iconic product of Apulian peasant cuisine: the frisella.
The heart of the festival is the friseddhra (frisella in the Salento dialect), a twice-baked wheat ring softened in water and topped with genuine, locally grown ingredients. The association's volunteers prepare it during the festival days to ensure freshness and authenticity, dressing it with fresh tomatoes, roasted eggplant, fried peppers, and peperonata. A unique feature of the festival is the completely free distribution of the main product, accompanied by drinks, pittule, chips, and sandwiches.
The festival days also offer the opportunity to visit the nearby Chapel of Sant'Anna, dating back to the 13th century: a small jewel of sacred art housing an interesting cycle of 14th-century frescoes. The tradition of the frisella is rooted in ancient history: it is said that knights departing from Apulian ports for the Holy Land carried this twice-baked bread with them, as it could be preserved for a long time during difficult crossings.
Around the food stalls, the festival comes alive with live music, folk dances, and the convivial atmosphere typical of Salento festivals, attracting residents and tourists from all over the region. The Friseddhra Festival is much more than a gastronomic event: it is a moment of community identity where the small village of Specchia Gallone gathers around the flavors and customs of the past, in one of the most evocative lands of Puglia.
The festival is traditionally held in the final days of July, with a two-day event in Largo Sant'Anna. The dates for the 2026 edition have not yet been officially announced by the organizers.

Specchia Gallone is a village of Minervino di Lecce, in lower Salento. By car, it can be reached from the state road connecting Maglie to Otranto; the nearest train station is in Maglie (Ferrovie del Sud Est line). The reference airport is Brindisi-Salento.
The event is free to enter and features the free distribution of dressed friselle. Other products (pittule, sandwiches, drinks) are available at the association's stalls.
Evenings generally begin after sunset. Take advantage of a visit to the Chapel of Sant'Anna and a stroll through the village before dinner.
